day 9 – Cooking with Abby

Tuesday night is my dinner night and this evening my beloved vegetarian roommate was gone for the night, so I made meat!  What follows is my adapted recipe for the Honey Baked Chicken from More with Less Cookbook

 

I didn't actually get any pictures of the finished product, but this is what it looked like before it went into the oven.

Baked Curry Tomato Chicken

5 Tbs butter, melted
1/2 c honey
1/3 c canola oil
4 Tbs. tomato paste
3 teas. curry powder
2 teas. ground mustard
1 teas. salt

3-4 onions
3 lbs chicken

Mix together sauce ingredients thoroughly until smooth.  Chop onions into thick half rings and chicken into bite-size pieces. Bake in a 350 degree oven for 1 hour or until cooked through.

And then I baked some potatoes and microwaved some green peas.

And used the leftover pumpkin puree from last week to make another batch of Winter Squash bars with chocolate chips.

It was a pretty yummy dinner!

  1. I love the Honey Baked Chicken recipe…good call on adding the tomato! Also, those squash bars look amazing–yum.


  2. Pumpkin and chocolate together is my favorite thing in the fall and early winter. I need to bake some pumpkin chocolate chip cookies, stat!
