After intending to so for around a month, I finally got around to baking the whoopie pie recipe I discovered on Epicurious. For those of you who don’t know or haven’t experienced them, whoopie pies are old fashioned cookies typically found in country/Amish stores. Consisting of two chocolate cakey cookies sandwiching a whipped white frosting middle, whoopie pies are near and dear to my heart.

Unfortunately not all whoopie pies are created equal, some come close to the perfect balance of moist chocolate cake like cookies to light sweet icing and others are bound to fail. I have to say this batch walked a fine line between the two with failure occurring in the categories of appearance and ability to stay together in one piece.  But achieving a decent rating in category of taste and a fairly high review in chocolatelyness.

In other news today was my last day of work for the week, seeing as we have no school on Good Friday and it was also a payday.  Which I have to say is always a lovely combination.  Plans include various church services, class at the YMCA with Jess, composting, driving to Midway, shopping at the Harvest, and hopefully some laundry, light cleaning and lots of reading/sleeping and relaxing.
